I can sympathize with Eliot, being someone who hasn't been to synagogue except for family gatherings since my Bar Mitzvah, but you'll notice that most of the bible thumpers seem to spend more time with the old testament than the new. In addition to the SAB, I would also recommend the Iron Chariots Wiki:

The name of the site comes from Judges 1:19, which essentially says that god couldn't overcome chariots made of iron, and is an excellent counter-apologist resource.

A couple of suggestions for Eliot:

"Asimov's Guide to the Bible" is an excellent run-through of the Bible, putting the stories in their historical context.

David Plotz's "Good Book" is a fun read as well. Plotz is a secular Jew who sat down to read the Torah and blogged about the experience. The blog posts were collected into this book.

I'd recommend against the idea of trying to find one quote to use against the "clobber verses" that believers use. You're just giving them the home-field advantage. But a good place to start would be with Fred "slacktivist" Clark's posts on Peter's vision in Acts 10 and Jubilee.

In Acts 10, Peter has a vision in which God tells him that God offers him unclean food, and tells him it's ok. Peter then takes this vision to mean that he should not treat Cornelius, a gentile Roman centurion, as an unclean outcast -- though modern Christians insist that it only means it's ok to eat shrimp now, and tend to ignore the message that Peter himself takes away from the story.

This doesn't work easily as a counter-clobber-verse simply because those who want to take the Bible "literally" will ignore the symbolism in the vision, even though Peter himself did not.

Jubilee is a concept that has been completely abandoned by conservative Christians, at least in the West. Forgiving all debts isn't popular among capitalists -- but it's one of the first things Jesus preached about. Ask the Bible-bangers what they think of it...

Of course, the verses in Leviticus 25 which proclaim Jubilee as the law also say:

"As for the male and female slaves whom you may have, it is from the nations around you that you may acquire male and female slaves. You may also acquire them from among the aliens residing with you, and from their families that are with you, who have been born in your land; and they may be your property. You may keep them as a possession for your children after you, for them to inherit as property. These you may treat as slaves, but as for your fellow Israelites, no one shall rule over the other with harshness."
